7th Street Burger
7th Street Burger opened its first location at 91 East 7th Street in the East Village in June 2021, and it's fair to say it kicked off New York's current smashburger boom more or less single-handedly. The format is deliberately narrow: there are only four things on the menu — a cheeseburger, a double cheeseburger, an Impossible burger, and fries — which lets the kitchen focus entirely on technique rather than variety. That technique is the whole draw. Roughly chopped onions get pressed directly into the beef patty as it's smashed onto the griddle with a spatula, producing something with the crisped, lacy edges of a diner slider rather than the thick, juicy profile of a classic bar burger. It comes topped with sweet grilled onions, a single pickle slice, and a house sauce, served on a squishy potato roll — greasy in the specifically good way that's become the calling card of the smashburger style nationally. Co-founder Kevin Rezvani has described the ambition behind the format directly: the goal, in his words, is to become "the In-N-Out of the East Coast" — an explicit statement of intent that the chain's rapid expansion to nearly twenty locations across New York, Washington D.C., and beyond has been taking seriously. The format matches the food: there's no seating inside the original location, and the handful of outdoor tables are usually taken, so eating standing on the sidewalk is the default experience rather than an inconvenience. It's open until 3am on weekends, which has made it as much a late-night East Village fixture as a lunch spot — the kind of place that catches bar traffic as much as regular meal service. The original East Village location's stripped-down, stand-and-eat format has become something of a template for the wider smashburger wave it helped kick off nationally — a lot of the smashburger spots that opened in its wake, in New York and beyond, borrowed directly from its four-item-menu, no-seating approach rather than trying to build a fuller restaurant experience around the format. That influence is part of why food writers treat 7th Street Burger as a genuine inflection point in New York's burger scene rather than just one good smashburger option among several, even as competitors have multiplied since its 2021 opening. Since that 2021 opening, 7th Street Burger has expanded to multiple locations and become a genuine reference point in food writing about New York's smashburger scene, frequently cited as the spot that made smash technique mainstream in the city the way it had already become across the rest of the country. For a New York cheeseburger list, it's the essential thin-patty, smash-style entry — the technical and stylistic opposite of Peter Luger's thick, dry-aged lunch burger a few miles away in Brooklyn, and proof that the city's burger scene has room for both extremes at once.
VS
Peter Luger (Burger, Lunch Only)
Peter Luger is, first and foremost, one of the most famous steakhouses in America — founded in 1887 near the Williamsburg Bridge in Brooklyn as "Carl Luger's Café, Billiards and Bowling Alley," with German-born Peter Luger as owner and his nephew Carl running the kitchen. The restaurant has been a fixture of New York dining for well over a century, and the core menu has barely changed in that time: the current format, built almost entirely around dry-aged porterhouse steak served with creamed spinach and fried potatoes, is close to what regulars would have found decades ago, with only gradual additions like salmon, sole, and extra-thick bacon layered in over the years. The burger is the restaurant's open secret — technically off the printed dinner menu and available only at lunch, which is exactly the kind of scarcity that turns a side item into a cult favorite. It's built from more than 250 grams of beef, freshly chopped every morning from the same dry-aged stock that goes into the steaks, which is what separates it from an ordinary steakhouse burger: this is dry-aged beef, ground in-house, served on a bun, at a fraction of the price of the dinner steak. For a lot of regulars, it's become the "insider" way to experience Peter Luger's beef quality without the full steakhouse price tag or the dinner reservation. Because it's lunch-only and not printed on the dinner menu, ordering it requires knowing to ask — which has only added to its reputation among burger obsessives who track it as one of the most legitimately excellent "secret" burgers in the city. It draws a genuinely different crowd than a typical New York burger spot: people who came for the steakhouse's reputation and discovered the burger is arguably the best-value way to taste what makes the beef program special in the first place. The restaurant's German-immigrant founding is still visible in small ways throughout the operation, from the traditional preparation methods to a service style that prioritizes consistency over flourish — waiters have historically worked there for decades, and the no-menu-changes philosophy extends to how orders are taken, with recommendations delivered as near-instruction rather than suggestion. For visitors specifically chasing the burger, the practical advice repeated across food writing is consistent: go for lunch specifically, be prepared that it's not listed on any printed menu, and expect to simply ask for it by name. The burger's reputation isn't universally uncontested, either — a New York Times critic once noted that Peter Luger's food has tended to be better in memory than in reality, and some online commentary has been blunter still, calling the burger specifically overrated relative to the hype. That tension is arguably part of the appeal: a burger this debated, attached to a steakhouse this famous, generates exactly the kind of strong opinions that make it worth trying and judging for yourself rather than taking either the superlatives or the backlash at face value. Peter Luger has held onto its reputation across more than 130 years partly by resisting almost every modernization pressure a restaurant this famous usually faces — no delivery until 2020, an unchanged core menu, and an old-school no-substitutions approach to service. On a "best cheeseburgers" list built around variety, it's the entry for people who want to taste what a genuine dry-aged steakhouse does when it turns its attention, almost as an afterthought, to a burger.
