Au Cheval
Au Cheval opened in Chicago's West Loop in 2012 and has spent over a decade as the reigning name in a city with no shortage of burger competition — of every hyped burger in Chicago, it likely has the longest continuous run of rave reviews, and it's regularly cited among the best cheeseburgers in America, not just the city. That's a genuinely rare thing to sustain for more than ten years in a food scene that turns over trends constantly. The restaurant itself is built as a diner-style bar with a real passion for eggs — the broader menu runs to chopped chicken liver, roasted bone marrow, and egg-focused entrées — but the double cheeseburger is what the wait is actually for. It's a thick, griddled patty built with real diner technique rather than smash-style speed, finished simply enough that the beef and cheese do the talking. That wait is a genuine part of the experience and not a small one: Au Cheval doesn't take reservations, seating is limited, and dinner waits upwards of two hours aren't unusual — a level of commitment most burger spots can't ask of customers and get away with. That it still pulls the crowd anyway, more than a decade after opening, is the clearest evidence of how the burger holds up against the hype. Part of what separates Au Cheval from a typical bar-and-grill burger is restraint dressed up as excess — the patty itself is thick and griddled with real technique, but the build stays close to a classic diner cheeseburger rather than piling on novelty toppings the way some "best burger in America" contenders do. The dry-aged, egg-forward menu around it signals a kitchen that could easily overcomplicate the burger and deliberately chose not to, letting the beef, cheese, and griddle char do all the work instead. That discipline is a big part of why it's held its reputation for over a decade in a city that churns through burger trends constantly. Au Cheval was Brendan Sodikoff's second restaurant after Gilt Bar, the craft-cocktail bar he opened in 2010 following a stint as a creative-development officer under Lettuce Entertain You's Richard Melman — training that shaped his approach to building out what's since grown into Hogsalt Hospitality, a group now running dozens of Chicago restaurants and bars. The space itself was remodeled from a former Greektown Gyros storefront to look like a diner that had already been there for decades, hand-painted signage included. Bon Appétit went further than most, naming the Au Cheval burger the single best burger in America outright, cementing a reputation Sodikoff then leveraged into Small Cheval, a faster-casual spinoff built around the same burger for people unwilling to brave the original's wait. For a Chicago cheeseburger list, Au Cheval is the essential "this is the one everyone talks about" entry — a diner-elevated, thick-patty burger from a kitchen that built its reputation on eggs and offal just as much as beef, in a West Loop room that still can't clear its own waitlist a decade in.

Kuma's Corner
Kuma's Corner opened in 2005 at the corner of Belmont and Francisco in Chicago's Avondale neighborhood, founded by Ron Cain around a mission he's described simply: support your community, eat beef, bang your head. Long before Chicago's current burger boom, Kuma's was already commanding hours-long waits from a humble corner spot — the hype here isn't recent, it's close to two decades deep. The gimmick and the substance are the same thing: every burger on the menu is named after a heavy metal band, and each one — a half-pound patty on a pretzel roll — is built to match the spirit of its namesake. The Slayer, the Black Sabbath, the Iron Maiden, the Pantera are all real menu items, not just clever names; the toppings genuinely escalate with each band's intensity. In 2014, Kuma's Ghost Burger — topped with ghost pepper aioli and an unconsecrated communion wafer — was named one of the most influential burgers of all time by TIME Magazine, a strange and specific honor for a burger built as much around shock value as flavor. The restaurant has had its business turbulence — its parent company filed for Chapter 11 bankruptcy in 2024, and a newer West Loop expansion location has since closed — but the original Avondale location has kept operating through the restructuring and remains open with regular hours, the location most identified with the Kuma's name and reputation. Founder Ron Cain's original framing — support your community, eat beef, bang your head — has stayed a genuine operating philosophy rather than just a slogan: the bar has long supported local musicians and metal culture specifically, not just used it as a theme, and the menu's constant rotation of new band-named burgers keeps regulars checking back the way a music venue's regulars check a tour schedule. That community-first identity is arguably what's kept the original location surviving the parent company's financial troubles while a shinier, newer expansion location didn't. Ron Cain's mission — support your community, eat beef, bang your head — has stayed more than a slogan: Kuma's has long paired its metal theme with actual metal culture, including ties to Three Floyds Brewing's Dark Lord Day festival, and the band-named menu keeps rotating with new additions rather than freezing in place. In April 2026, Cain announced plans to franchise the concept across the U.S. and internationally, expanding well beyond the handful of Chicago-area and Indianapolis locations Kuma's had grown into since the Avondale original opened in 2005. That franchising push comes even as the parent company continues operating under the Chapter 11 restructuring it filed in 2024, a sign of confidence that the brand's underlying popularity has outlasted its balance-sheet troubles. For a Chicago cheeseburger list, Kuma's is the essential "excess as an art form" entry — a half-pound, thick-patty burger bar that's been naming its menu after metal bands and testing customers' spice tolerance since 2005, in a room that still packs a wait despite two decades of copycats trying the same trick.
