Birrieria Zaragoza
Birrieria Zaragoza's story starts not in a restaurant but in a home kitchen. In 2002, owner Juan Zaragoza learned to make birria — Jalisco-style stewed and roasted goat — from Miguel Segura back in his hometown of La Barca, Jalisco, following a recipe tradition the family describes as more than 165 years old. Back in Chicago, word spread that the family was cooking birria out of their house, and it eventually became a semi-clandestine weekend restaurant operating out of their own basement. That informal basement operation became official in September 2007, when Juan Zaragoza rented a small storefront in the Archer Heights neighborhood and opened Birrieria Zaragoza as a real restaurant. The preparation has stayed rooted in that original technique: locally sourced, grass-fed young goats are steam-cooked for five hours, marinated in a rich ancho-based mole, and then oven-roasted to finish — a genuinely labor-intensive process most restaurants wouldn't commit to for a single dish. The restaurant has earned real recognition for sticking to that traditional, time-intensive method rather than simplifying it for volume — it's been featured in Chicago Magazine's "Iconic Eats" coverage and recommended by the Michelin Guide, notable distinctions for a family-run birrieria that started as an underground basement operation less than two decades ago. The 165-year lineage of the recipe itself is worth sitting with — Juan Zaragoza didn't invent this style of birria, he inherited a technique passed down through generations in La Barca before bringing it to Chicago and refusing to shortcut the five-hour cook time even as the business scaled from a basement to a proper storefront. That refusal to compromise on process, more than any single marketing effort, is what separates Birrieria Zaragoza from newer birria spots that have chased the dish's recent national popularity with faster, less labor-intensive methods. Zaragoza's original Archer Heights location started as a five-table storefront when Juan and his wife Norma opened it in October 2007, small enough that most of the operation was still shaped by the family's earlier underground basement restaurant. The business has grown carefully since: in 2023 the Zaragozas opened a second location in Uptown, next to the Green Mill jazz club, extending the family recipe beyond a single Southwest Side storefront for the first time in the restaurant's history. Recognition has followed that same slow, earned trajectory — beyond the Michelin Guide mention, Birrieria Zaragoza has been named among Food Network's best tacos in the country and was featured in the third season of Netflix's "Taco Chronicles," notable exposure for a restaurant that, less than two decades earlier, was operating quietly out of someone's house. For a Chicago taco list, Birrieria Zaragoza is the essential "one family, one dish, done exactly right" entry — a 165-year-old birria recipe carried from Jalisco to a Chicago basement to a proper Archer Heights storefront, still made with the same five-hour process the family has never simplified.
VS
Taqueria Chingón
Taqueria Chingón built its reputation on a chef-driven, creative approach to tacos that pushes well past the traditional format — duck carnitas finished with date purée and a sunchoke-habanero salsa is the restaurant's signature move, the kind of combination that signals a kitchen treating tacos as a serious culinary format rather than a casual, fast order. The restaurant's original Bucktown location closed in November 2024 due to rising operational costs, a genuine setback for a well-regarded spot — but rather than closing for good, it reopened in May 2025 at a new Fulton Market address with a larger kitchen, indoor seating, and a patio, an upgrade in physical space that's let the kitchen expand on what it can put out. That relocation is worth knowing if you're used to the old Bucktown address. The Fulton Market neighborhood itself has become one of Chicago's most concentrated dining destinations over the past decade, filled with ambitious, chef-driven restaurants — Taqueria Chingón's move there places it directly alongside some of the city's most talked-about kitchens, a meaningfully different context than its original, more low-key Bucktown storefront. The restaurant's willingness to relocate rather than close after the original location's costs became unsustainable says something about the underlying strength of the concept — a lesser-regarded restaurant facing the same rent pressures in 2024 likely would have shut down entirely rather than reinvest in a bigger, pricier Fulton Market buildout. Taqueria Chingón's Michelin recognition and steady press coverage through that transition suggest the reopening was a genuine vote of confidence in the concept, not just a scaled-back retreat. Taqueria Chingón was founded in December 2020 by chefs Marcos Ascencio and Oliver Poilevey, opening in Bucktown in the middle of the pandemic — a genuinely risky moment to launch a new chef-driven restaurant. Poilevey brought real Chicago restaurant lineage to the project: his father ran the French bistro La Sardine for 22 years, giving Oliver a childhood spent around a working kitchen before he applied that same seriousness to Mexican street food instead. The gamble paid off quickly — Eater named it one of Chicago's best new restaurants in 2021, and Chicago Magazine gave it a Best New Restaurant nod in 2022, recognition that had already built real momentum before the original Bucktown space became financially unsustainable in 2024 and the concept relocated to its current, larger Fulton Market home. For a Chicago taco list, Taqueria Chingón is the essential "tacos as fine dining technique" entry — duck carnitas with date purée in a newly expanded Fulton Market kitchen, proof that Chicago's most ambitious chefs are willing to bring serious technique to a format usually associated with speed and simplicity.
