Carmelo's Tacos
Carmelo's Tacos was founded in 2018 by Carmelo Gaspar, with Raul Delfin joining as co-owner, starting as a small counter operation inside Hillcrest Market on Capitol Hill rather than a standalone restaurant. That market-stall beginning gave the concept a low-overhead way to prove itself before committing to a full storefront — a common, sensible path for a new taco concept, but one that requires the food to be good enough to draw people specifically to a shared market space. The menu commits to Mexico City-style street food, built around affordable, authentic tacos rather than a fusion or Americanized approach — al pastor, asada, and campechano tacos anchor the lineup, alongside breakfast burritos, quesadillas, and churros. A signature vegan mushroom taco, seasoned with garlic and guajillo chile, has become a specific standout for a menu that could easily have treated a meatless option as an afterthought. That commitment to doing Mexico City street food specifically, rather than a broader Tex-Mex menu, has helped Carmelo's stand out even in a Seattle taco scene that already includes several other Mexico City-style specialists — the campechano and al pastor builds here read as genuinely dialed-in rather than a generic street-taco approximation. By 2021, the concept had grown enough to open its first full-service location on Cherry Street near Seattle University, a 1,300-square-foot space with seating for around 30 people and an outdoor patio — a real step up from the original market counter. A third location later opened on Broadway, extending Carmelo's from a single market stall into a genuine multi-location presence in just a few years. For a Seattle taco list, Carmelo's Tacos is the essential "market stall that earned a real storefront" entry — Mexico City street tacos that built a following one counter order at a time before expanding into full-service locations near Seattle University and on Capitol Hill's Broadway.

La Carta de Oaxaca
La Carta de Oaxaca opened in 2003 on Ballard Avenue, a Latino-owned restaurant built specifically around the cuisine of Oaxaca rather than a generalized Mexican menu — a regional specificity that was, and largely still is, uncommon among Seattle's Mexican restaurants, most of which lean toward broader Tex-Mex or standard street-taco formats. The menu reflects that regional focus directly: tacos al pastor alongside ceviche finished with pineapple, lamb birria, and tlayudas piled with chorizo, carne asada, cheese, and cabbage — a genuinely wide-ranging showcase of Oaxacan cooking rather than a narrow taco-only concept. Mole negro served over pork ribs is one of the kitchen's most distinctive dishes, the kind of slow-built, deeply layered sauce that takes real technique and time to get right. That commitment to a specific culinary region, paired with an unusually deep mezcal and tequila list for a neighborhood restaurant, has built La Carta de Oaxaca a reputation as one of Ballard's most essential kitchens rather than just a good taco stop — the tacos here are one strong part of a much broader, more ambitious menu. Recognition has followed steadily since opening: Eater Seattle included it in its 2013 "Essential 38" list of the city's most important restaurants, Seattle Magazine readers voted it the city's best Mexican restaurant in 2018, and Seattle Metropolitan featured it in both its 2022 "100 Best Restaurants" list and a dedicated roundup of the city's best tacos and Mexican food. The restaurant has since expanded its footprint with a sibling location, El Mezcalito, in Queen Anne — extending the same Oaxacan focus to a second neighborhood more than two decades after the Ballard original opened. For a Seattle taco list, La Carta de Oaxaca is the essential "regionally specific, not just generically Mexican" entry — a two-decade Ballard institution built around real Oaxacan technique, where the tacos are excellent but only one part of a genuinely ambitious menu.
