Carmelo's Tacos
Carmelo's Tacos was founded in 2018 by Carmelo Gaspar, with Raul Delfin joining as co-owner, starting as a small counter operation inside Hillcrest Market on Capitol Hill rather than a standalone restaurant. That market-stall beginning gave the concept a low-overhead way to prove itself before committing to a full storefront — a common, sensible path for a new taco concept, but one that requires the food to be good enough to draw people specifically to a shared market space. The menu commits to Mexico City-style street food, built around affordable, authentic tacos rather than a fusion or Americanized approach — al pastor, asada, and campechano tacos anchor the lineup, alongside breakfast burritos, quesadillas, and churros. A signature vegan mushroom taco, seasoned with garlic and guajillo chile, has become a specific standout for a menu that could easily have treated a meatless option as an afterthought. That commitment to doing Mexico City street food specifically, rather than a broader Tex-Mex menu, has helped Carmelo's stand out even in a Seattle taco scene that already includes several other Mexico City-style specialists — the campechano and al pastor builds here read as genuinely dialed-in rather than a generic street-taco approximation. By 2021, the concept had grown enough to open its first full-service location on Cherry Street near Seattle University, a 1,300-square-foot space with seating for around 30 people and an outdoor patio — a real step up from the original market counter. A third location later opened on Broadway, extending Carmelo's from a single market stall into a genuine multi-location presence in just a few years. For a Seattle taco list, Carmelo's Tacos is the essential "market stall that earned a real storefront" entry — Mexico City street tacos that built a following one counter order at a time before expanding into full-service locations near Seattle University and on Capitol Hill's Broadway.

Tacos Chukis
Tacos Chukis opened in 2011, founded by Roberto Salmerón in what's been described as "a tiny, upstairs space" on Capitol Hill — an unglamorous, easy-to-miss starting point for a restaurant that would go on to become one of the most talked-about taco spots in the city. The format has stayed close to that original identity ever since: fast-casual, scratch-made Mexico City-style tacos and tortas, sold at a genuinely low price point. The signature order is the restaurant's namesake taco — standard fillings dressed up with al pastor pork, cheese, and grilled pineapple for a small upcharge — alongside a full standard lineup of meat and vegetarian tacos finished with salsa, guacamole, cilantro, and onion. It's a straightforward street-taco build executed with enough consistency that it's earned a genuine cult following well beyond Capitol Hill. That cult status has been well documented locally: Thrillist, Eater Seattle, Seattle Metropolitan, and Tasting Table have all praised the restaurant, and a local news feature specifically credited its "cult status" to the combination of stellar tacos and a genuinely killer price — a rare combination that's kept Chukis relevant even as Seattle's taco scene has gotten more crowded and more expensive around it. The concept expanded from that original upstairs Capitol Hill space to South Lake Union in 2016, Beacon Hill in 2017, and the Central District in 2018, growing into a real multi-location presence within less than a decade. That growth wasn't without real controversy — in early 2020, the U.S. Department of Labor's Wage and Hour Division required the business to pay more than $400,000 to 92 employees across its four locations for overtime violations, a serious labor issue worth knowing alongside the restaurant's culinary reputation. For a Seattle taco list, Tacos Chukis is the essential "cult-status cheap taco" entry — a Mexico City-style street taco that grew from a tiny upstairs Capitol Hill room into a four-location favorite, built on the kind of quality-to-price ratio that turns a good taco into a genuine local obsession.
