The Cheesecake Factory
The Cheesecake Factory opened its first restaurant in Beverly Hills in 1978, evolving from a bakery started by founder Oscar Overton's mother, Evelyn, into a massive national restaurant chain famous both for its enormous, wide-ranging menu and for the dozens of cheesecake flavors that gave the chain its name. The restaurant's menu, running to well over 200 items across nearly every cuisine category, became a genuinely distinctive part of its identity, frequently cited in food media and comedy alike as an example of maximalist American restaurant menu design taken to its furthest extreme. Its cheesecake selection, sold both by the slice in-restaurant and as whole cakes to take home, ranges across dozens of rotating and permanent flavors, and the chain's cheesecakes are also distributed to other restaurants and retailers under separate branding. The Cheesecake Factory's combination of its famously enormous menu and its extensive, genuinely well-regarded cheesecake lineup has made it one of the most commercially significant dessert-focused restaurant chains in the country.
VS
Milk Bar
Milk Bar was founded by pastry chef Christina Tosi in New York City in 2008 as an offshoot of chef David Chang's Momofuku restaurant group, built around playfully inventive American desserts including the Compost Cookie, Cereal Milk soft serve, and the Milk Bar Pie. Tosi's approach, deliberately drawing on nostalgic American junk-food flavors like cereal milk and pretzel bits and elevating them into carefully crafted bakery items, represented a genuinely distinct philosophy from the French-pastry-influenced approach common at many other high-end American bakeries. Milk Bar's expansion beyond its original East Village location into a national chain, alongside nationally distributed packaged versions of its cookies and cakes sold in grocery stores, brought Tosi's specific dessert sensibility to a much wider audience than a single-city bakery could reach. Milk Bar's combination of Christina Tosi's playfully nostalgic dessert philosophy and its growth from a single Momofuku offshoot into a national dessert brand has made it one of the most influential modern American dessert concepts.
