Dovetail Brewery
Dovetail Brewery opened in Chicago's Ravenswood neighborhood in 2016, founded by Hagen Dost and Bill Wesselink around a shared commitment to traditional German and Belgian lagering and fermentation techniques, produced using genuinely old-world brewing methods rather than modern shortcuts. The brewery's decagon-shaped, custom-built brewhouse, along with its use of open fermentation and extended lagering periods for many of its beers, reflected a level of process-driven authenticity uncommon even among other traditionally minded American breweries, closer to a small European brewing operation than a typical Chicago taproom. Dovetail's range, spanning German lagers, Belgian farmhouse ales, and even a dedicated cider program, gave it unusual stylistic breadth for a brewery so committed to traditional technique, appealing to drinkers interested in old-world brewing craftsmanship rather than trend-driven new releases. For a Chicago breweries list, Dovetail is the essential "old-world technique, built from scratch in Ravenswood" entry — a brewery whose commitment to traditional German and Belgian methods sets it apart from Chicago's more trend-driven craft beer scene.

Revolution Brewing
Revolution Brewing opened its Logan Square brewpub in 2010, founded by Josh Deth, and grew quickly into one of the largest independent craft breweries in Illinois, expanding to a dedicated production brewery on Kedzie Avenue to keep pace with demand for its core lineup. Anti-Hero IPA became the brewery's signature beer and one of the most widely distributed Chicago-brewed IPAs in the state, a hop-forward, aggressively bittered beer that helped define what a "Chicago IPA" meant to drinkers during the style's broader national boom in the 2010s. The brewery's name and branding, drawing on revolutionary and protest imagery, reflected Logan Square's own identity at the time as a neighborhood in the middle of visible cultural and economic change, giving Revolution a specifically local point of view beyond just its beer. For a Chicago breweries list, Revolution is the essential "neighborhood brewpub that scaled into a statewide power" entry — proof that a single Logan Square taproom could grow into one of Illinois's largest independent breweries without losing its original identity.
