El Camión
El Camión has built its reputation the way a lot of the best taco spots do — not through a single flagship restaurant, but through a small fleet of food trucks parked at fixed locations across north Seattle, in Ballard, Roosevelt, North Seattle, and Sand Point. That truck-based model has let the business focus entirely on the food rather than on dining-room overhead, and it's kept prices and turnaround times genuinely fast across all four locations. The menu sticks to straightforward, well-executed Mexican street food — tacos built for quick, satisfying orders rather than an elaborate sit-down meal — alongside catering and bulk tamale service for anyone planning ahead for a larger event. The Seattle Times has described the trucks as "a truckload of goodness," a simple but genuine bit of praise for a business that's never needed a dining room to earn real local loyalty. Running four separate truck locations rather than consolidating into one brick-and-mortar restaurant is itself a meaningful choice — it puts El Camión directly in each of those neighborhoods rather than asking customers to travel to a single destination, a genuinely different growth strategy than most of the sit-down taquerias elsewhere on this list. That neighborhood-embedded model has let El Camión become a familiar, reliable presence across a wide swath of north Seattle rather than a single-address destination people have to specifically seek out — the kind of taco truck regulars build into a weekly routine simply because there's always one within reach. For a Seattle taco list, El Camión is the essential "no restaurant required" entry — a four-truck operation spread across Ballard, Roosevelt, North Seattle, and Sand Point, proof that a taco business can build serious local loyalty without ever opening a single dining room.
VS
Marination
Marination started in June 2009 when founders Kamala and Roz launched a food truck called Big Blue, bringing a genuinely unusual combination to Seattle's streets: Hawaiian and Korean fusion cooking, built around spicy, tangy, sweet, aloha-laden flavors that had no obvious precedent in the city's existing taco scene. Launching a new food truck concept in the middle of the 2008-09 financial crisis was a real risk, and the fact that it worked says something about how distinct the idea was. The tacos themselves reflect that fusion identity directly rather than treating it as a gimmick layered onto a standard build — Korean-style marinated meats, kimchi, and island-leaning sauces on a taco format that owes as much to Seattle's Pacific Rim food culture as it does to any single national tradition. Malasadas, the Portuguese-Hawaiian fried doughnut, round out a menu that's never tried to pass itself off as straightforward Mexican street food. That willingness to be genuinely its own thing — rather than a straight taco truck with a novelty topping or two — is exactly what's let Marination build a loyal following over more than fifteen years, expanding via word of mouth and steady local and national press coverage rather than any single viral moment. The original Big Blue truck has since grown into three brick-and-mortar restaurants: Marination Ma Kai on Alki Beach, known for some of the best waterfront views of any restaurant in the city; a downtown Seattle location; and a Columbia City spot with a full bar and patio. That expansion from a single truck to three distinct sit-down restaurants, sustained across a decade and a half, is a genuinely rare trajectory for a food-truck concept. For a Seattle taco list, Marination is the essential "this isn't traditional and it doesn't pretend to be" entry — Hawaiian-Korean fusion tacos that started on one truck during a recession and grew into three restaurants, including one with the best view on this whole list.
