El Palenque
El Palenque traces back to November 1981, when the concept first opened in Knoxville, Tennessee, well before it ever reached Nashville. The restaurant expanded into Nashville later in the decade, opening its first Nashville-area location on Nolensville Road in 1988, right as that corridor was becoming one of the city's most significant hubs for Mexican and Latin American immigrant-owned businesses. A second Nashville-area location followed in Green Hills in 1990, and that Green Hills restaurant has since become the address most associated with the El Palenque name in Nashville, serving Mexican classics and a genuinely deep tequila cocktail program in a comfortable, sit-down setting with outdoor tables — a more traditional restaurant experience than the counter-service taquerias that dominate much of the rest of Nashville's Mexican food scene. The restaurant has stayed owner-operated across its four-decade run, a detail that matters in a category where regional Tex-Mex chains often get bought up or standardized once they cross a certain number of locations. El Palenque's menu leans into that same consistency — a wide variety of dishes built to please a broad range of tastes, rather than a narrow, chef-driven tasting menu approach. Having launched in Knoxville in 1981 and operated continuously in Middle Tennessee since the late 1980s, El Palenque has quietly become one of the longer-running Mexican restaurant names in the state, predating most of the newer, more design-forward taco concepts that have opened around Nashville in the years since. For a Nashville taco list, El Palenque is the essential "old-school sit-down Tex-Mex" entry — a 1980s Knoxville transplant that's anchored Nashville's Mexican restaurant scene for nearly four decades with a broad menu and a genuinely deep tequila program.
VS
San Antonio Taco Company (SATCO)
San Antonio Taco Company, universally known around Nashville as SATCO, was founded in 1984 by two Vanderbilt University graduates who had grown up in San Antonio, Texas, and wanted to bring an authentic Tex-Mex restaurant to the college neighborhood where they'd studied. The original restaurant opened that fall on 21st Avenue, right in the heart of the Vanderbilt area, and it quickly became a fixture for students, hospital staff from the nearby medical center, and Music Row artists and songwriters looking for a casual, unpretentious meal. In November 1990, the original owners sold SATCO to two other Vanderbilt graduates, who have continued running the restaurant in roughly the same spirit — a straightforward, no-frills Tex-Mex menu built around tacos, built for a crowd that wants a reliably good meal rather than an elaborate dining experience. That ownership transition, more than three decades ago now, kept the business in the hands of people who understood exactly what made the original concept work. SATCO's Vanderbilt-area location has been central to its identity from day one — it's the kind of restaurant generations of students have treated as a rite of passage, and alumni who moved away from Nashville decades ago still talk about it as a genuine touchstone of their college years rather than just another off-campus restaurant. Forty years in the same corner of Nashville, through one ownership change and enormous surrounding development, is a genuinely rare run for an independent Tex-Mex restaurant — SATCO has outlasted plenty of flashier competitors by sticking to a simple, consistent menu rather than chasing trends. For a Nashville taco list, SATCO is the essential "old-school Tex-Mex college institution" entry — a 1984 original built by two homesick San Antonio natives, still serving the Vanderbilt neighborhood the same straightforward Tex-Mex tacos four decades later.
