Franklin Barbecue
Franklin Barbecue, opened by Aaron Franklin and his wife Stacy in 2009 from a trailer before moving to a permanent East Austin location, became the single most nationally famous barbecue restaurant to emerge from the modern Texas barbecue renaissance, with lines regularly forming hours before the restaurant even opens. Franklin's 2015 James Beard Award for Best Chef Southwest, an unusual honor for a barbecue pitmaster rather than a traditional fine-dining chef, reflected the broader critical reevaluation of Texas barbecue as a serious culinary craft rather than simply a regional specialty, with Franklin's meticulous approach to smoke, bark, and brisket technique specifically credited for that shift. His subsequent Netflix series and instructional content further cemented his status as the most publicly recognized figure in modern American barbecue, turning brisket-slicing technique and fat-cap trimming into genuinely discussed topics well beyond barbecue's traditional enthusiast circles. For an Austin BBQ list, Franklin Barbecue is the essential "the one that changed everything" entry — a James Beard Award-winning trailer-turned-restaurant whose meticulous brisket technique redefined what modern Texas barbecue could be taken seriously as.
VS
Micklethwait Craft Meats
Micklethwait Craft Meats, founded by Tom Micklethwait in 2011 as an East Austin trailer, built its reputation around a slightly more experimental approach within Central Texas barbecue tradition, including menu items like barbecue-stuffed baked potatoes and boudin alongside the classic brisket and ribs. Its willingness to incorporate a broader range of specialty and seasonal items beyond the core Central Texas barbecue staples gave it a distinct identity among Austin's barbecue trailers, appealing to diners specifically seeking creative variations on traditional smoked meat rather than a purely classic approach. The trailer's continued operation and consistent local praise, sustained across more than a decade in a barbecue scene as competitive and closely scrutinized as Austin's, reflected genuine technical quality behind its more experimental menu additions. For an Austin BBQ list, Micklethwait is the essential "classic technique, creative menu" entry — an East Austin trailer applying serious Central Texas barbecue fundamentals to a broader, more experimental range of smoked specialty dishes.
