Franklin Barbecue
Franklin Barbecue, opened by Aaron Franklin and his wife Stacy in 2009 from a trailer before moving to a permanent East Austin location, became the single most nationally famous barbecue restaurant to emerge from the modern Texas barbecue renaissance, with lines regularly forming hours before the restaurant even opens. Franklin's 2015 James Beard Award for Best Chef Southwest, an unusual honor for a barbecue pitmaster rather than a traditional fine-dining chef, reflected the broader critical reevaluation of Texas barbecue as a serious culinary craft rather than simply a regional specialty, with Franklin's meticulous approach to smoke, bark, and brisket technique specifically credited for that shift. His subsequent Netflix series and instructional content further cemented his status as the most publicly recognized figure in modern American barbecue, turning brisket-slicing technique and fat-cap trimming into genuinely discussed topics well beyond barbecue's traditional enthusiast circles. For an Austin BBQ list, Franklin Barbecue is the essential "the one that changed everything" entry — a James Beard Award-winning trailer-turned-restaurant whose meticulous brisket technique redefined what modern Texas barbecue could be taken seriously as.
VS
Terry Black's Barbecue
Terry Black's Barbecue, opened in 2014 by members of the Black family, who also founded the well-known Black's Barbecue in Lockhart, brought that multi-generational Central Texas barbecue lineage directly into Austin with a larger, higher-volume restaurant format than many of the city's trailer-based competitors. Its larger dining room and more traditional full-service restaurant setup, distinct from the walk-up trailer format common among Austin's other top barbecue spots, gave it the capacity to serve considerably higher volumes without the same extended wait times, while maintaining the family's traditional Central Texas technique. The restaurant's direct lineage to Lockhart, one of the towns most closely associated with the foundational history of Central Texas barbecue, gave Terry Black's a specific claim to traditional technical authenticity relative to some of Austin's newer, more independently founded barbecue operations. For an Austin BBQ list, Terry Black's is the essential "Lockhart lineage, Austin scale" entry — a Black family barbecue restaurant bringing genuine Central Texas barbecue heritage into a larger, higher-volume Austin restaurant format.
