H&H Bagels
H&H Bagels, founded in 1972 on the Upper West Side, became one of the most nationally famous names in New York bagels during the late 20th century, at one point reportedly the largest bagel producer in the city and a fixture referenced repeatedly in television and film depictions of New York. The original H&H closed in 2011 amid financial and legal troubles, but the brand was revived under new ownership beginning in 2014, reopening with the same traditional boiled-and-baked technique and continuing to trade on the name's decades of accumulated New York bagel cultural cachet. Its continued operation today, including retail and wholesale bagel production, reflects both the brand's genuine historical significance to New York bagel culture and the specific, ongoing effort by its current ownership to preserve and rebuild that legacy after its earlier closure. For a New York bagels list, H&H is the essential "the most famous name, revived" entry — a once-dominant 1972-founded bagel brand that closed and was brought back, carrying decades of New York bagel cultural history along with it.
VS
Russ & Daughters
Russ & Daughters has operated on Manhattan's Lower East Side since 1914, founded by Polish-Jewish immigrant Joel Russ, and it remains one of the oldest continuously running "appetizing" shops in the country, a specifically Jewish-American food category built around smoked fish, bagels, and cream cheese rather than hot deli meats. Its name, unusual for the era in explicitly crediting Russ's three daughters who worked in and eventually took over the business, reflected a genuinely progressive family structure for a early-20th-century immigrant-owned shop, and the business has remained family-run across four generations since. Its bagels, served with a rotating selection of the shop's celebrated house-smoked and cured fish, including its renowned Nova Scotia salmon and sable, have made the classic bagel-and-lox combination one of the most historically significant and consistently imitated Jewish-American food traditions in the country. For a New York bagels list, Russ & Daughters is the essential "the appetizing shop that defined it" entry — a four-generation, 1914-founded Lower East Side institution whose bagel-and-smoked-fish tradition remains the historical benchmark for the entire category.
