Intelligentsia Coffee
Intelligentsia was founded in 1995 by Doug Zell and Emily Mange, who moved to Chicago from San Francisco and found — to their surprise — that genuinely great coffee was hard to come by in their new city. On October 9, 1995, they opened a café and roaster in what was then an emerging Lakeview neighborhood, roasting in-store on a Probat L12 and building their reputation one bag of their signature Black Cat blend at a time. That original Broadway location is still open today, three decades later. Intelligentsia's real significance goes beyond any single café: the company's focus on direct sourcing, careful roasting, and deliberate brewing helped kick off what's now widely called Third Wave Coffee — the movement that treats coffee with the same seriousness wine or craft beer gets, tracing beans to specific farms and roasting to highlight origin character rather than just caffeine delivery. Intelligentsia was one of the handful of roasters credited with starting that shift nationally, not just locally in Chicago. From that single Lakeview café, the company has grown into a genuinely large operation — roasting and training centers, wholesale coffee service to other cafés and restaurants, retail bars in multiple cities, and coffee subscriptions, all traceable back to the same 1995 storefront. It's since become part of a larger multinational coffee company, though the original Lakeview café has kept its identity as the place where all of it started. The Black Cat blend specifically has become something of a shorthand for Intelligentsia's whole identity — a dark, full-bodied espresso blend that's been on the menu essentially since the beginning and remains the most-ordered starting point for anyone new to the shop. Thirty years on, the Broadway café still functions as a genuine neighborhood coffee bar rather than a corporate flagship showroom, even as the brand behind it has scaled into training centers and wholesale operations most regulars ordering a morning cortado never think about. Zell and Mange built Intelligentsia's identity around Direct Trade sourcing years before that term became a specialty-coffee industry standard — paying above-market, negotiated prices directly to growers rather than buying through commodity channels, on the theory that better-compensated farmers could invest back into quality. That sourcing philosophy, combined with the original Broadway café's in-house roasting, is what coffee writers point to when crediting Intelligentsia as one of the small handful of companies that effectively created American third-wave coffee as a category, alongside contemporaries on the West Coast. The company has since built out training centers for baristas and roasters, a wholesale division supplying other cafés and restaurants, and multi-city retail operations, all of which trace back to sourcing decisions the founders were making out of that single Lakeview storefront in the mid-1990s. For a Chicago coffee list, Intelligentsia is the essential "this is where third-wave coffee actually started" entry — a serious, dark-roast-leaning espresso program in the same Broadway storefront that helped define an entire category of American coffee culture three decades ago.
VS
The Wormhole Coffee
The Wormhole Coffee's original Wicker Park location leans fully into an 1980s theme — vintage arcade cabinets, retro decor, and a genuinely playful atmosphere built around nostalgia rather than the minimalist aesthetic most specialty coffee shops default to. It's one of the more distinctive cafés in a neighborhood that already has plenty of competition for attention. The concept proved successful enough that the owners opened a second location nearby with a different theme — a 1990s-themed "Wormhole 2" a few blocks away — extending the retro-decade bit into a small mini-franchise built entirely around nostalgia branding rather than differentiated coffee programs. That second location closed in 2022, a casualty of rising rent that the shop's owners were candid about in local coverage, but the original 80s-themed Wicker Park café has remained open and continues to be the location most associated with the Wormhole name. Underneath the theme, the coffee program itself is a straightforward, well-regarded specialty operation — the arcade cabinets and retro signage are the hook, but the espresso and drip program are what's kept regulars coming back on their own merits rather than just for the novelty of the setting. The closure of Wormhole 2 is a useful reminder of how difficult it is to run a themed concept at more than one location — a nostalgia gimmick that reads as charming and specific in one storefront can start to feel like a diluted franchise formula the moment it's replicated with a different decade slapped on, and the owners' decision to let the second location go rather than force it to work says something about their priorities. The original Wicker Park shop, at least, has had two decades to get the balance between theme and substance exactly right. The Wormhole was founded in June 2010 by a group of former IT professionals, including co-founder James Tillapaugh, who restored the café's signature DeLorean himself — a full-scale replica of the time machine from Back to the Future, complete with an "OUTATIME" license plate and working time-circuit details, that's become the shop's most-photographed feature. Underneath the theme, the shop's coffee program runs on HalfWit Coffee Roasters, a roasting operation launched by Wormhole owner Travis Schaffner in partnership with Gaslight Roasters — meaning the café's beans come from a genuine collaboration between two of the neighborhood's more established coffee names rather than a generic in-house label slapped on for branding purposes. That pairing of a serious roasting partnership with an unapologetically silly interior is part of what's let the Wormhole hold its own against more minimalist, design-forward competitors in Wicker Park for over a decade. For a Chicago coffee list, The Wormhole is the essential "genuinely fun to just be in" entry — an 80s-themed Wicker Park café with real coffee chops underneath the nostalgia, proof that a specialty coffee shop can lean fully into a gimmick without letting the coffee itself become an afterthought.
