InterStellar BBQ
InterStellar BBQ, founded by pitmaster Brandon Hurtado, emerged as one of the most acclaimed newer additions to Austin's barbecue scene, quickly earning comparisons to the city's most established barbecue destinations despite opening considerably more recently than Franklin, la Barbecue, or Terry Black's. Hurtado's background working under other respected Austin pitmasters before opening his own restaurant gave InterStellar a level of technical grounding that helped it establish credibility quickly within a barbecue scene where reputation typically takes years to build through sustained, consistent execution. Its rapid rise to prominence, drawing lines comparable to the city's longer-established barbecue destinations within just a few years of opening, reflected both genuine quality and the continued overall growth and competitiveness of Austin's barbecue scene even among its more recently opened entrants. For an Austin BBQ list, InterStellar is the essential "the new benchmark" entry — a newer pitmaster-led barbecue restaurant that's rapidly earned comparisons to Austin's most established names, reflecting the continued depth of the city's barbecue scene.
VS
Micklethwait Craft Meats
Micklethwait Craft Meats, founded by Tom Micklethwait in 2011 as an East Austin trailer, built its reputation around a slightly more experimental approach within Central Texas barbecue tradition, including menu items like barbecue-stuffed baked potatoes and boudin alongside the classic brisket and ribs. Its willingness to incorporate a broader range of specialty and seasonal items beyond the core Central Texas barbecue staples gave it a distinct identity among Austin's barbecue trailers, appealing to diners specifically seeking creative variations on traditional smoked meat rather than a purely classic approach. The trailer's continued operation and consistent local praise, sustained across more than a decade in a barbecue scene as competitive and closely scrutinized as Austin's, reflected genuine technical quality behind its more experimental menu additions. For an Austin BBQ list, Micklethwait is the essential "classic technique, creative menu" entry — an East Austin trailer applying serious Central Texas barbecue fundamentals to a broader, more experimental range of smoked specialty dishes.
