Kerlin BBQ
Kerlin BBQ, opened by Bill and Amy Kerlin in East Austin in 2012, built its reputation around a meticulous, traditional Central Texas approach to brisket, sausage, and ribs, with Bill Kerlin's background staging at some of the region's most respected barbecue joints before opening his own trailer. Its pork ribs and boudin in particular earned consistent praise from local and national food critics, giving Kerlin BBQ a broader reputation beyond brisket alone at a time when brisket quality alone tended to dominate most barbecue rankings and comparisons across Austin's crowded scene. The trailer's continued operation as a genuinely independent, husband-and-wife-run operation, without the larger scale or multiple locations some of Austin's more prominent barbecue names have since grown into, has kept Kerlin BBQ closely associated with a smaller-scale, craft-focused approach to the city's barbecue tradition. For an Austin BBQ list, Kerlin BBQ is the essential "small-scale, technically excellent" entry — a husband-and-wife-run East Austin trailer whose ribs and boudin have earned it a reputation extending well beyond brisket alone.
VS
la Barbecue
la Barbecue, founded by pitmaster Leann Mueller, a member of the storied Mueller family behind several of Texas's most historically significant barbecue institutions, built its own East Austin following around a similarly meticulous approach to smoked brisket, sausage, and ribs. Its status as one of the few prominent Austin barbecue trailers led by a woman pitmaster distinguished it within a barbecue scene still heavily dominated by male pitmasters, and Mueller's family barbecue lineage gave the operation genuine multi-generational technical credibility from its earliest days. The trailer's consistently long lines, comparable to those at nearby Franklin Barbecue, reflected its status as one of the two or three most consistently top-ranked barbecue destinations in a city with an unusually deep and competitive barbecue scene. For an Austin BBQ list, la Barbecue is the essential "the Mueller family lineage" entry — a trailer led by a pitmaster from one of Texas barbecue's most historically significant families, consistently ranked among the city's very best.
