Los Tacos No. 1
Los Tacos No. 1 opened in May 2013 as a stand inside Chelsea Market, founded by Christian Pineda, a Tijuana native, along with Tyler Sanders and Kyle Cameron, both from Brawley, California, a town near the Mexican border. Pineda had moved to New York and found the city's taco options genuinely lacking compared to what he'd grown up with, and built the stand specifically to close that gap rather than to chase a trend. The format stayed deliberately narrow from day one — no dining room, no expansive menu, just a small handful of tacos built around a proper vertical trompo for al pastor and carefully sourced corn tortillas, made fresh rather than treated as an afterthought. That narrowness is a large part of why the line moves fast even when it's long, and why the quality has stayed consistent as the stand became one of the most talked-about food stalls in the entire market. Chelsea Market itself is a genuinely crowded field of well-regarded vendors, and Los Tacos No. 1 has held its position as one of the most consistently recommended stops in the building for over a decade, a rare thing in a food hall where novelty usually fades fast. The corn tortillas, made in-house, are as much a signature as the meat on top of them. For a national tacos list, Los Tacos No. 1 is the essential "the trompo done right in a food hall" entry — an authentic vertical al pastor spit and in-house corn tortillas, built by a Tijuana native who found New York's taco scene lacking and simply fixed it himself.
VS
Guisados
"Guisados" means "stews" in Spanish, and that's exactly what fills the small, hand-pressed corn tortillas at the restaurant of the same name — a format more common on home stoves in Mexico than on American taco menus, built around braised meat and vegetable fillings rather than anything grilled. Armando De La Torre Sr. opened the original Boyle Heights location in 2010 around that idea, encouraging customers to order several small tacos instead of committing to just one — a built-in tasting-menu structure most taquerias don't offer. The fillings rotate through a wide range — cochinita pibil, mole, chicharrón, and vegetarian options like squash blossom all show up regularly — each one built around a slow-cooked stew rather than a quickly grilled protein, which gives the kitchen a very different rhythm than a griddle-and-trompo taco stand. That format rewards ordering a mixed plate rather than committing to a single filling. From the original Boyle Heights location, Guisados has expanded to multiple Los Angeles neighborhoods, including Echo Park, downtown, and Highland Park, while keeping the same small-tortilla, stew-based format at every location — a rare instance of a concept scaling without diluting what made the original distinctive. For a national tacos list, Guisados is the essential "the stewed taco, not the grilled one" entry — small hand-pressed corn tortillas piled with slow-braised fillings, built specifically to be ordered five different ways on the same plate.
