Marlowe
Marlowe opened in San Francisco's Design District/South Beach area in 2011, the work of chef Jennifer Puccio and restaurateur Anna Weinberg, whose Big Night Restaurant Group has since grown to include Park Tavern, The Cavalier, and Bergerac around the city. Marlowe was one of the earlier entries in that group, built as a corner neighborhood bistro rather than a destination restaurant, and the Marlowe Burger became the dish that carried its reputation well beyond the block it sits on. The burger itself is a thick, griddled patty built with real bistro technique — a blend of ground beef, caramelized onions, and melted cheese piled onto a bun sturdy enough to hold it all together — finished with the kind of composed, chef-driven attention that distinguishes it from a diner or drive-through burger. It's routinely named among the city's best burgers in local "best of" roundups, the sort of recurring, unglamorous recognition that matters more over a decade than any single splashy write-up. Puccio's kitchen has never treated the burger as an afterthought to the rest of Marlowe's bistro menu — steak frites, deviled eggs, and a full raw bar share the space — which is part of why the burger has held up against newer, more burger-specific competition opening around it in the years since. A composed kitchen applying the same care to a cheeseburger that it applies to a raw bar tends to produce a more consistent burger than a kitchen built around the burger alone. That the restaurant has kept its South Beach corner spot and its bistro identity intact for well over a decade, while the burger itself became the headline order almost by accident, says something about how word of mouth actually builds a reputation in San Francisco's restaurant scene. For a San Francisco cheeseburger list, Marlowe is the essential "bistro kitchen's breakout burger" entry — a thick, chef-built patty from a full-menu restaurant that happens to have become one of the city's most-cited burgers almost in spite of itself.

4505 Burgers & BBQ
4505 Burgers & BBQ grew out of 4505 Meats, the whole-animal butchery and sausage company chef Ryan Farr started from his own San Francisco apartment in 2009 after leaving his post as executive chef at Fifth Floor, a fine-dining restaurant inside the Hotel Palomar. Farr built the meat company on serious butchery technique first, selling out of a stand at the Ferry Building farmers market before the burger and barbecue side of the business grew into its own brick-and-mortar restaurant in the NoPa neighborhood. That charcuterie background shows up directly in the burger: a butcher's understanding of fat ratios, grind, and seasoning applied to a thick, well-charred patty built with the same care Farr brought to sausage-making rather than treated as a separate, lesser discipline. The burger has become one of the restaurant's signature orders, served alongside a full barbecue menu of smoked meats that reflects the same whole-animal philosophy the company was founded on. Farr's path from a fine-dining kitchen to farmers-market butchery to a full restaurant is a genuinely unusual one for a San Francisco burger spot, and it's part of what separates 4505's burger from more conventional gourmet or diner-style competitors on this list — this is a kitchen that came to the burger by way of serious meat science rather than the other way around. That the business grew organically from a single apartment operation into a Ferry Building stand and then a standalone NoPa restaurant, without ever losing the butchery-first identity that started it, says something about how deliberately Farr built the brand rather than rushing straight to a storefront. For a San Francisco cheeseburger list, 4505 Burgers & BBQ is the essential "butcher's burger" entry — a thick, well-seasoned patty from a chef who built his reputation on whole-animal technique before he ever opened a burger counter.
