Mashed Potatoes
Mashed potatoes became a fixture of the American Thanksgiving table as potatoes themselves became a dominant American staple crop through the 19th and 20th centuries, offering a simple, universally appealing starch that paired naturally with turkey gravy. The dish's preparation, requiring little more than boiled potatoes, butter, and milk or cream, made it one of the most accessible Thanksgiving dishes across income levels and regions, a genuinely democratic dish relative to some of the meal's more labor-intensive or regionally specific companions. Idaho and Washington state's dominance of American potato production, driven by their high desert growing conditions particularly suited to the crop, made the Pacific Northwest and Mountain West the practical agricultural foundation underlying the dish's Thanksgiving ubiquity nationwide. Its combination of its broad, near-universal appeal and its foundational role as the gravy-bearing centerpiece starch has made mashed potatoes one of the most consistently present dishes across virtually every American Thanksgiving table.

Green Bean Casserole
Green bean casserole was invented in 1955 by Dorcas Reilly, a home economist working in the Campbell Soup Company's test kitchen, specifically as a way to market the company's condensed cream of mushroom soup using ingredients most households already had on hand. Its recipe — green beans, cream of mushroom soup, and crispy fried onions — remained almost entirely unchanged from Reilly's original version for decades, an unusual level of recipe stability for a dish that began explicitly as a corporate marketing creation rather than an organic culinary tradition. The dish's origin as a deliberate product-marketing recipe, rather than a dish with deeper historical or regional roots, makes it one of the clearest examples of 20th-century American food industry innovation directly reshaping a long-standing cultural holiday tradition. Its combination of its surprisingly recent corporate origin and its subsequent near-universal adoption as a genuine Thanksgiving tradition has made green bean casserole one of the most distinctive dishes on the modern American holiday table.
