Metropolitan Brewing
Metropolitan Brewing was founded in 2008 by Doug Hurst and Tracy Hurst around a specific, then-unfashionable commitment: German-style lagers, brewed with the same technical patience and cold-conditioning discipline that most American craft breweries of the era were skipping in favor of faster-turnaround, more aggressively hopped ales. That lager-focused approach made Metropolitan a genuine outlier within Chicago's early craft beer wave, and its Krankshaft Kölsch and Dynamo Copper Lager became reference points for drinkers specifically seeking clean, traditionally styled lager brewing rather than the hop-forward beers dominating most other local taprooms. The brewery's relocation to a larger production facility in the Avondale neighborhood let it expand lagering capacity significantly, since traditional lager brewing requires far more tank time and cold storage than ale production, a genuine operational commitment to the style most breweries don't make. For a Chicago breweries list, Metropolitan is the essential "lagers done the patient, traditional way" entry — a brewery that bet on the hardest, least trendy beer category during craft beer's IPA-dominated boom and built a lasting reputation on it.
VS
Dovetail Brewery
Dovetail Brewery opened in Chicago's Ravenswood neighborhood in 2016, founded by Hagen Dost and Bill Wesselink around a shared commitment to traditional German and Belgian lagering and fermentation techniques, produced using genuinely old-world brewing methods rather than modern shortcuts. The brewery's decagon-shaped, custom-built brewhouse, along with its use of open fermentation and extended lagering periods for many of its beers, reflected a level of process-driven authenticity uncommon even among other traditionally minded American breweries, closer to a small European brewing operation than a typical Chicago taproom. Dovetail's range, spanning German lagers, Belgian farmhouse ales, and even a dedicated cider program, gave it unusual stylistic breadth for a brewery so committed to traditional technique, appealing to drinkers interested in old-world brewing craftsmanship rather than trend-driven new releases. For a Chicago breweries list, Dovetail is the essential "old-world technique, built from scratch in Ravenswood" entry — a brewery whose commitment to traditional German and Belgian methods sets it apart from Chicago's more trend-driven craft beer scene.
