Nicky's Coal Fired
Nicky's Coal Fired opened in 2016 in The Nations, a West Nashville neighborhood built out of former industrial land, founded by Tony and Caroline Galzin as a family-owned Italian restaurant centered on a single, genuinely rare piece of equipment: a four-ton, custom-built coal-burning pizza oven the Galzins named "Enrico," described as the only coal-fired pizza oven in Tennessee. The restaurant occupies a converted space in the former Belle Meade Hosiery Mill on Centennial Boulevard, giving it real industrial character that fits the neighborhood's own transformation from mill town to one of Nashville's fastest-growing residential pockets. The pizza menu runs seven red and six white options, all built on daily sourdough crusts made from scratch and finished in Enrico's coal-fired heat, which produces a different char and texture than a standard wood-fired or gas oven. Beyond pizza, Nicky's runs a full Italian menu of house-made pastas, charcuterie and cheese boards, and gelato and other desserts, plus a private event space called The Maxwell Room — a broader ambition than a single-format pizzeria, closer to a full neighborhood Italian restaurant that happens to have built its identity around one very specific oven. That coal-fired distinction is a genuine rarity worth understanding: most American pizzerias chasing a wood-fired or Neapolitan reputation use wood or gas, and coal ovens require a specific, harder-to-maintain setup that few restaurants bother investing in — Nicky's built its entire brand around being the one Tennessee kitchen willing to do it. For a Nashville pizza list, Nicky's Coal Fired is the essential "the only coal oven in the state" entry — a family-owned Italian restaurant in a converted West Nashville hosiery mill, built entirely around a four-ton custom coal-burning oven no other Tennessee pizzeria has replicated.
VS
DeSano Pizza Bakery
DeSano Pizza Bakery brought a genuinely strict version of Neapolitan pizza to Nashville, built around the vision of recreating an authentic Italian pizza-making experience rather than an Americanized approximation of one. The restaurant follows the guidelines set by the Associazione Verace Pizza Napoletana, the Naples-based organization that certifies what can and can't technically be called true Neapolitan pizza — a level of formal adherence most American pizzerias don't bother pursuing. That commitment shows up in the ingredients as much as the technique: imported Mozzarella di Bufala, flour shipped by boat rather than sourced domestically, and Mediterranean sea salt all make their way into the dough and toppings. The pizzas themselves are cooked in wood-burning ovens hot enough to finish a pie in roughly 60 seconds — a dramatically faster, higher-heat process than a standard American pizza oven, and part of what gives Neapolitan crust its distinctive char and chew. DeSano's Music Row-area location leans into an industrial-chic setting where diners can watch the ovens and the pizza-making process directly, turning the kitchen itself into part of the draw rather than hiding it in the back. Reviewers have described it as delivering a genuine taste of Naples — by way of New York, where the format found an earlier American foothold — inside Nashville. The restaurant has built a reputation as one of the most authentic pizza experiences in the city specifically because of that VPN-guideline discipline — it would be easier and cheaper to substitute domestic ingredients, and DeSano's decision not to is a big part of why it's regarded as Nashville's most rigorously traditional Neapolitan option. For a Nashville pizza list, DeSano Pizza Bakery is the essential "true Neapolitan, no shortcuts" entry — VPN-guideline pizza built with imported ingredients and cooked in under a minute, the most authentically Italian pizza experience the city has to offer.
