Novo Coffee
Novo Coffee has been roasting and serving coffee in Denver since 2002, long enough that the company describes itself as a genuine pioneer of the city's specialty coffee culture — one of the roasters that helped establish Denver as a serious coffee market well before that reputation was a given. Its tagline, "Made With Heart since 2002," has stayed attached to the brand through more than two decades of growth. The company has built its identity around direct relationships throughout its supply chain, working with producers and importers rather than buying purely on the commodity market, and roasting to order so that beans ship close to the day they're actually roasted. That freshness-first approach extends into the cafés themselves, which function as both retail coffee bars and a public face for a company that also runs a wholesale roasting operation, a subscription program, and brewing classes for home enthusiasts. From its original roots, Novo has grown into a genuine multi-location Denver presence — a downtown café, additional neighborhood locations in Congress Park and Cheesman Park, and a dedicated roastery on Larimer Street — without folding into a single flagship-only identity. That spread has made Novo one of the more recognizable names for anyone moving through downtown Denver looking for a serious cup rather than a fast commuter coffee. For a Denver coffee list, Novo is the essential "this is where it started" entry — a direct-trade, roast-to-order coffee company that's been operating continuously in the city since 2002, old enough to have helped define what a serious Denver coffee shop looks like in the first place.
VS
Pablo's Coffee
Pablo's Coffee traces back to 1995, when owner Craig Conner started an espresso bar inside the Denver Center for the Performing Arts complex — a modest beginning for what's since become one of the longer-running independent coffee names in the city. The business relocated to its current East 6th Avenue address in 2001, and by 2002 had become one of Denver's first roaster-retailers, roasting its own beans in small batches in a corner of the shop before demand eventually pushed that roasting operation off-site. That early roaster-retailer status matters for understanding Pablo's place in Denver coffee history — it was doing in-house small-batch roasting well before that became the standard expectation for a serious specialty coffee shop, at a time when most Denver cafés were still buying beans wholesale from outside suppliers. The stated philosophy has stayed consistent since: hand-roasting in small batches specifically to bring out each bean's body, balance, and sweetness rather than roasting for consistency alone. A second Capitol Hill location opened in 2012 inside a genuinely historic building — the former Penn Garage, which serviced automobiles for more than seventy years before being renovated into a café. That adaptive reuse, pairing a decades-old auto shop with a coffee company that's itself been part of Denver's café scene since the mid-1990s, has given the second location a sense of place the original 6th Avenue café built more gradually over time. For a Denver coffee list, Pablo's is the essential "quietly one of the city's originals" entry — a roaster-retailer operating continuously in Denver since 1995, now running three shops that pair small-batch, hand-roasted coffee with two genuinely distinctive pieces of the city's architecture.
