Off Color Brewing
Off Color Brewing was founded in 2013 by John Laffler and Dave Bleitner, both former Goose Island brewers, built around reviving obscure, often nearly extinct historic beer styles — gose, grodziskie, and other regional European traditions that had fallen almost entirely out of production before the brewery's founders began researching and recreating them. The brewery's Fulton Market taproom, which also houses a small brewing museum-style display explaining the historic styles on tap, reflected the founders' specifically archival, research-driven approach to beer, treating brewing history as source material rather than starting from scratch with generic modern styles. Off Color's willingness to commit entire production runs to styles most American drinkers had never heard of, rather than hedging with a more conventional IPA-and-pale-ale core lineup, gave it a genuinely distinct identity within Chicago's increasingly crowded craft beer scene. For a Chicago breweries list, Off Color is the essential "beer archaeology" entry — a brewery built by two former Goose Island brewers around reviving forgotten historic styles most other breweries had never attempted.
VS
Goose Island Beer Co.
Goose Island Beer Co. was founded by John Hall in 1988 on Clybourn Avenue, opening as one of the first craft breweries in a city that, at the time, had essentially no independent brewing scene of its own to speak of. That early, unglamorous starting point makes Goose Island's later influence on American craft beer even more notable — it didn't inherit a beer culture, it helped build one from scratch. The brewery's Bourbon County Stout, first brewed in 1992 as a one-off for its 1,000th batch, is widely credited with launching the entire modern category of bourbon barrel-aged beer, a style now produced by breweries worldwide but pioneered on Goose Island's original Clybourn Avenue system. Anheuser-Busch InBev's 2011 acquisition of Goose Island became one of craft beer's most debated ownership stories, dividing longtime Chicago drinkers between those who saw it as a loss of independence and those who credited the deal with dramatically expanding Bourbon County's national distribution and cultural reach. For a Chicago breweries list, Goose Island is the essential "the one that started it all, then got complicated" entry — the brewery whose Bourbon County Stout reshaped an entire beer category, even as its own ownership story became a lightning rod within craft beer culture.
