Pablo's Coffee
Pablo's Coffee traces back to 1995, when owner Craig Conner started an espresso bar inside the Denver Center for the Performing Arts complex — a modest beginning for what's since become one of the longer-running independent coffee names in the city. The business relocated to its current East 6th Avenue address in 2001, and by 2002 had become one of Denver's first roaster-retailers, roasting its own beans in small batches in a corner of the shop before demand eventually pushed that roasting operation off-site. That early roaster-retailer status matters for understanding Pablo's place in Denver coffee history — it was doing in-house small-batch roasting well before that became the standard expectation for a serious specialty coffee shop, at a time when most Denver cafés were still buying beans wholesale from outside suppliers. The stated philosophy has stayed consistent since: hand-roasting in small batches specifically to bring out each bean's body, balance, and sweetness rather than roasting for consistency alone. A second Capitol Hill location opened in 2012 inside a genuinely historic building — the former Penn Garage, which serviced automobiles for more than seventy years before being renovated into a café. That adaptive reuse, pairing a decades-old auto shop with a coffee company that's itself been part of Denver's café scene since the mid-1990s, has given the second location a sense of place the original 6th Avenue café built more gradually over time. For a Denver coffee list, Pablo's is the essential "quietly one of the city's originals" entry — a roaster-retailer operating continuously in Denver since 1995, now running three shops that pair small-batch, hand-roasted coffee with two genuinely distinctive pieces of the city's architecture.
VS
Crema Coffee House
Crema Coffee House opened on Larimer Street in 2009, founded by Noah Price and Jonathan Power at a moment when the RiNo and Five Points area was still mostly industrial rather than the dense arts and dining district it's since become. The café is widely credited as one of the shops that first made the case Denver could be treated as a genuinely serious coffee city, on par with the West Coast markets that had gotten there first. That seriousness shows up in the details: Crema treats provenance, processing method, and roast profile with the kind of attention a good restaurant gives a wine list, rather than presenting coffee as an interchangeable commodity drink. The café brews through French press and lever espresso equipment, rotates in guest roasters and single-origin offerings alongside its own program, and has built a reputation among Denver's coffee-obsessive crowd specifically because the sourcing and preparation are treated as the point rather than a backdrop to a laptop-friendly hangout. The space itself — exposed brick, worn-in furniture, a well-used Larimer Street patio — has stayed intentionally understated even as the RiNo neighborhood around it has filled in with far glossier competition since 2009. That restraint, paired with real technical seriousness behind the counter, is a big part of what's kept Crema a reference point rather than just one option among many in one of Denver's most coffee-dense stretches. For a Denver coffee list, Crema is the essential "the shop that proved the city could do this" entry — a 2009-era RiNo café that helped set Denver's third-wave coffee standard, still treating sourcing and roast profile with restaurant-wine-list seriousness more than fifteen years later.
