Pumpkin Pie
Pumpkin pie's association with Thanksgiving dates back to colonial New England, where pumpkins were among the few crops reliably available in late autumn, and Sarah Josepha Hale's influential 1827 novel "Northwood" specifically described pumpkin pie as an essential part of an idealized Thanksgiving table decades before the holiday was formally nationalized. The dish's modern ubiquity owes much to Libby's canned pumpkin, first introduced in 1929 and produced at the company's Illinois cannery, which eliminated the labor-intensive process of preparing fresh pumpkin and made the pie practical for households nationwide regardless of local pumpkin availability. The town of Morton, Illinois, home to that Libby's processing plant, now grows and processes the overwhelming majority of the canned pumpkin sold in the United States, earning it the self-declared title "Pumpkin Capital of the World" and hosting an annual Pumpkin Festival celebrating the connection. Its combination of its deep colonial-era historical roots and its modern near-total dependence on a single Illinois processing region has made pumpkin pie one of the most historically layered dishes on the Thanksgiving table.
VS
Roast Turkey
Roast turkey has been the centerpiece of the American Thanksgiving table since at least the mid-19th century, when writer Sarah Josepha Hale's decades-long editorial campaign helped standardize Thanksgiving as a national holiday and turkey as its defining dish, well beyond the meal's more varied original 17th-century colonial roots. The bird's large size relative to chicken or duck made it practically suited to feeding an extended family gathering from a single roast, a logistical advantage that helped cement its centrality even as other Thanksgiving foods varied considerably by region and household tradition. Modern turkey production, dominated by companies like Butterball, transformed what was once a smaller heritage-breed bird into the larger, more uniformly bred Broad Breasted White turkey that now accounts for the vast majority of birds sold for the holiday each November. Its combination of its foundational role in Thanksgiving's 19th-century standardization and its continued status as the meal's single most identifiable dish has made roast turkey the essential, unavoidable centerpiece of the American Thanksgiving table.
