Rodney Scott's Whole Hog BBQ
Rodney Scott's Whole Hog BBQ brought the whole-hog barbecue tradition Scott learned growing up working his family's roadside barbecue stand in rural Hemingway, South Carolina, to Charleston, and Scott's subsequent James Beard Award for Best Chef Southeast in 2018 made him one of the most nationally recognized barbecue pitmasters in the country. His whole-hog method, cooking entire pigs over wood coals through an overnight process and finishing with a vinegar-and-pepper South Carolina-style sauce, represents one of the most labor-intensive and traditionally rigorous barbecue techniques still practiced at a commercial scale anywhere in the country. Scott's rise from a small-town roadside stand to a James Beard Award and a growing multi-city restaurant group reflects one of the more significant individual pitmaster success stories in modern American barbecue, bringing genuine rural South Carolina technique to a broader national audience. For a Charleston BBQ list, Rodney Scott's is the essential "James Beard-winning whole hog" entry — the restaurant that brought rural South Carolina's most labor-intensive barbecue tradition to the national stage through one of the country's most celebrated pitmasters.
VS
Melvin's Legendary BBQ
Melvin's Legendary BBQ traces its roots to a Charleston barbecue tradition stretching back to the 1930s, with the current operation carrying forward a family barbecue legacy that predates most of the city's other current barbecue restaurants by decades. Its traditional South Carolina mustard-based sauce, along with its barbecue hash served over rice — a distinctly Lowcountry regional specialty less commonly found outside South Carolina — reflects a deep commitment to the state's specific historical barbecue traditions rather than a more generalized regional approach. The restaurant's long operating history has made it a genuine multi-generational Charleston institution, the kind of barbecue spot longtime residents specifically associate with the city's barbecue tradition predating the more recent wave of nationally recognized pitmasters opening restaurants there. For a Charleston BBQ list, Melvin's is the essential "decades-deep local tradition" entry — a barbecue operation tracing back to the 1930s, serving traditional South Carolina mustard sauce and barbecue hash well before Charleston's more recent barbecue boom began.
