Storyville Coffee
Storyville Coffee was founded in 2006 on Bainbridge Island, just a ferry ride across Puget Sound from downtown Seattle, starting life as a roaster and mail-order coffee company rather than a café-first operation. That roasting studio on Bainbridge Island has stayed the company's production home even as its retail presence has grown well beyond the island itself. In 2013, Storyville announced plans to open inside Pike Place Market, taking over a space in the Corner Market building that had previously housed Chez Shea — a genuinely prime piece of Seattle real estate, putting the roaster directly inside the city's most visited public market rather than in a quieter residential neighborhood. That Pike Place café has since become the location most visitors and locals alike associate with the Storyville name. The café goes beyond straightforward espresso and pour-overs, serving sandwiches and baked goods alongside its coffee program to function as a full stop for the steady stream of market visitors passing through — a different operating model than a quiet, laptop-friendly neighborhood shop, built instead for a high-traffic tourist and local mix at once. That recognition has followed the roasting program specifically: USA Today named Storyville among the top ten roasters in the country, and Insider named it the coziest coffee shop in Washington state — two very different kinds of praise, one for the coffee itself and one for the atmosphere, both pointing at a company that's built something more layered than a simple market coffee stand. In 2022, Storyville employees filed a petition to unionize, part of a broader wave of organizing that's touched specialty coffee companies nationally in recent years. For a Seattle coffee list, Storyville is the essential "Pike Place Market coffee done right" entry — a Bainbridge Island roaster whose Corner Market café gives millions of market visitors a genuinely serious cup of coffee instead of a purely tourist-facing one.
VS
Elm Coffee Roasters
Elm Coffee Roasters opened in December 2014 in Seattle's Pioneer Square neighborhood, founded by Brendan Mullally and Drew Fitchette inside the Pacific Commercial Building on Main Street — one of Pioneer Square's many well-preserved historic brick storefronts, giving the café real architectural character from day one rather than a generic modern build-out. The shop leans hard into light roasting specifically, a deliberate choice that puts Elm in more direct conversation with the lighter, single-origin-focused wing of Seattle's third-wave coffee scene than with the city's older, darker-roast tradition. That commitment to light roasting is paired with a genuinely education-forward approach to the counter experience — staff are known for being, as regulars describe it, geeky yet approachable, the kind of baristas happy to talk through harvesting and processing details with a curious customer rather than just taking an order. The 1,400-square-foot space itself has become part of the draw — a marble bar, high industrial ceilings, and outdoor seating at blue tables that give the café a distinct, design-conscious identity within Pioneer Square's older architecture, striking a balance between historic bones and a clean, modern coffee-bar aesthetic. Pioneer Square itself is one of Seattle's oldest neighborhoods, and it's undergone real ups and downs over the decades as the city's center of gravity shifted elsewhere; Elm's decision to plant a serious specialty coffee roastery there in 2014 was part of a broader, ongoing effort to bring foot traffic and daytime energy back to the neighborhood's historic core, rather than opening in an already-established coffee destination like Capitol Hill. For a Seattle coffee list, Elm Coffee Roasters is the essential "light roast, old bones" entry — a 2014 Pioneer Square roastery built inside a historic brick storefront, treating light-roast coffee education with the same seriousness the neighborhood's older buildings bring to the streetscape around it.
