Torchy's Tacos
Torchy's Tacos started as a single food truck on South First Street in Austin, Texas, in August 2006, founded by chef Mike Rypka around the idea that tacos could carry real chef-driven technique — hand-battered proteins, made-from-scratch tortillas, and premium ingredients — rather than sticking to standard fast-casual Tex-Mex. The truck grew into brick-and-mortar locations starting in 2010, and the chain has since expanded to well over a hundred restaurants. Denver holds a specific place in that expansion story: when Torchy's opened its Broadway location in February 2016, it marked the chain's first restaurant outside Texas, a genuine bet that the concept could travel rather than staying a regional Austin favorite. Local reaction was immediate and intense enough that lines out the door became part of the opening's own local coverage. The menu leans on bold, sometimes unconventional taco builds — the "Trailer Park" and other named specialty tacos have become the chain's signature format, built around flour tortillas and generous, chef-composed fillings rather than a strict regional style. That's a meaningfully different experience than the traditional, family-run taquerías that make up most of the rest of Denver's taco scene, closer to a fast-casual chain applying real culinary ambition to a familiar format at scale. For a national tacos list, Torchy's Tacos is the essential "chef-driven taco chain" entry — an Austin food truck turned hundred-plus-location chain built around scratch-made, chef-composed tacos rather than a strict regional style.
VS
La Taqueria
La Taqueria opened on Mission Street in 1973, founded by Miguel Jara, who emigrated from Tijuana in 1961 and built the space out himself after deciding to open a taqueria that could recreate the food he missed from home. More than fifty years later, it's one of the most cited taquerias in the country, not just the Mission District, and it's stayed under the same family's ownership the entire time. The restaurant is credited — by Bon Appétit and other national food publications — with helping create the Mission-style burrito format itself: a large, foil-wrapped burrito built without rice, leaning on meat, beans, cheese, and salsa rather than filler to bulk up the portion. That same kitchen discipline carries over to the tacos, served on small corn tortillas with the same carefully cooked meats, without the rice-and-sour-cream additions that pad out many other taquerias' offerings. FiveThirtyEight named La Taqueria the best burrito in the country in 2014, and in 2017 the James Beard Foundation recognized it as one of "America's Classics," an honor specifically reserved for beloved, community-rooted restaurants rather than fine-dining destinations. That's a rare combination of data-driven ranking and institutional recognition for a counter-service taqueria that's never changed its basic format to chase either kind of attention. For a national tacos list, La Taqueria is the essential "this is where the format got defined" entry — corn tortilla tacos and rice-free burritos from the taqueria most directly credited with establishing Mission-style Mexican food as its own American tradition.
