Uneeda Burger
Uneeda Burger opened in 2010 in Seattle's Fremont neighborhood, built inside a converted auto and boat repair garage on Fremont Avenue North — old roadside-service bones repurposed into a counter-service burger joint rather than smoothed over into something more generic. That converted-garage setting has stayed part of the restaurant's identity, giving it a lived-in, old-roadside-diner charm that a from-scratch build wouldn't have. The kitchen describes its own approach as a chef-driven twist on the classic American burger joint, and the menu backs that up with real range beyond a standard beef cheeseburger — lamb burgers, salmon burgers, and vegetarian options sit alongside the beef lineup, including a well-regarded mushroom burger and the "Big Star," topped with coleslaw, crispy onions, and barbecue sauce. Hand-cut fries and specialty shakes round out a menu built for a counter that takes its craft seriously without dropping the roadside-stand informality. That range is part of what separates Uneeda from a burger joint that just happens to also offer a token veggie option — lamb and salmon builds require genuinely different technique from a standard beef patty, and offering all of them well, at the same counter, signals a kitchen more ambitious than its converted-garage setting might suggest at first glance. Fremont itself has long had a reputation as one of Seattle's quirkier, more independent-minded neighborhoods, and Uneeda's history — a genuine repair garage turned burger counter, with the old building's character kept rather than erased — fits that identity closely. It's the kind of restaurant that reads as a natural extension of its neighborhood rather than an import that happened to land there. For a Seattle cheeseburger list, Uneeda Burger is the essential "chef-driven range beyond just beef" entry — a converted Fremont garage serving lamb, salmon, and mushroom burgers alongside its cheeseburger, proof that a counter-service burger joint can commit to real variety without losing its roadside charm.

Red Mill Burgers
Red Mill Burgers traces back to 1937, when the original Capitol Hill location first opened, giving it one of the longest lineages of any cheeseburger spot in Seattle. That original run wasn't continuous, though — the Capitol Hill restaurant closed in 1967, and the Red Mill name sat dormant for nearly three decades before new ownership revived it in the Phinney Ridge neighborhood in 1994, the location that's since become the flagship most people mean when they say Red Mill. The burgers lean thick and hand-formed rather than smashed, dressed with classic diner toppings and, notably, a genuinely well-regarded onion ring alongside the fries — the kind of place where the sides get talked about nearly as much as the burger itself. It's a straightforward, no-reinvention approach that's stayed consistent across the chain's modern locations. That revival proved durable: a second location opened in the Interbay neighborhood in 1998, and a third followed near the Ballard Locks in late 2011, occupying a restored historic building known as Totem House. Each expansion has kept the same counter-service, cash-friendly, lines-out-the-door format that made the Phinney Ridge original a neighborhood fixture in the first place. Having a nearly 90-year-old name — even with a multi-decade gap in the middle — gives Red Mill a different kind of credibility than a newer gourmet burger concept chasing the current smashburger trend. The 1994 revival team clearly understood what they were reviving: a genuinely old-school Seattle burger identity, not a nostalgia-branded reinvention, and that's part of why regulars across three neighborhoods still treat Red Mill as an established fact of the city rather than a recent discovery. For a Seattle cheeseburger list, Red Mill Burgers is the essential "old Seattle name, three thriving locations" entry — a thick, hand-formed cheeseburger with roots back to 1937, now anchoring Phinney Ridge, Interbay, and a restored Ballard Locks storefront.
